Vegan Unicorn Cake Pops (Using a Cake MIx!)

Description

These mystical treats combine the cuteness of cake pops with the magic of unicorns, all while staying true to a vegan lifestyle.


Ingredients

For the Cake Balls:

  • 1 batch of your favorite vegan cake (flavor of your choice)
  • 1 cup vegan frosting (flavor to complement the cake)
  • 2 cups Vegan white chocolate chips or melts for coating (I Like the Enjoy Life White Chocolate Chips)
  • 2 Tablespoons Coconut Oil
  • Vegan food coloring (various colors)
  • Cake pop sticks

 

For the Unicorn Decorations:

  • Vegan sprinkles, unicorn horns, edible glitter, or pearl dust for decoration. (I bought unicorn sprinkles from Amazon snd separated the horns in the sprinkle mix to use separately. I used the white unicorns tomake ears but you could use unmelted white choclate chips for ears.
  • Vegan food coloring and toothpicks for drawing eyes. Vegan edible markers can be used as well.

Instructions

 

  1. Bake your favorite vegan cake according to the recipe instructions. Let it cool completely.
  2. Once the cake has cooled, crumble it into a large bowl. Add the vegan frosting and mix until the mixture has a dough-like consistency. Refrigerate for 20-30 minutes to firm the batter. This will be your cake pop base.
  3. Roll the cake mixture into small balls and place them on a lined baking sheet. Melt a tablespoon of white chocolate chips in a small bowl in a double boiler or use a microwave on a low setting, stirring and checking every 10 seconds. Dip a cake pop stick into the melted chocolate insert into each cake ball and place them in the freezer for about 15-20 minutes to firm up.
  4. Combine the vegan white chocolate chips or melts with coconut oil. Melt in the microwave or using a double boiler. Save some un-melted white chocolate chips for unicorn ears if you like.
  5. If you want, you can divide the melted white chocolate into separate bowls and add vegan food coloring to create vibrant unicorn colors like pastel pink, blue, purple, and gold.
  6. Dip each cake pop into the colored chocolate, allowing any excess to drip off. Place them back on the lined baking sheet to harden.
  7. While the chocolate is still wet, decorate your cake pops with unicorn horns, vegan sprinkles, edible glitter, or pearl dust. If chocolate is too hard to affix decorations apply more melted chocolate. You can use food coloring to dye a little white chocolate and draw on eyes with a toothpick or you can draw them on with use edible food markers. Get creative and add some extra magic!
